Healthy Noodles Soup
This recipe is a perfect option for breakfast, especially when you're in a hurry, and you want something that will keep you full for longer.
Ingredients
- 1 package of dried noodles
- 4 cups of water
- 1 tablespoon of olive oil
- 1/2 onion chopped
- 1 garlic clove, minced
- 2 cups of chopped vegetables (carrots, broccoli, snow peas, etc.)
- 1/2 teaspoon of salt
- 1/4 teaspoon of black pepper
- 2 tablespoons of soy sauce
- 1 tablespoon of sesame oil
- 1/4 cup of chopped green onions
Instructions
- Cook the noodles according to the instructions on the package. Drain and set aside.
- In a large pot, heat the olive oil over medium-high heat. Add the chopped onion and garlic and cook for 2-3 minutes until the onion becomes translucent.
- Add the chopped vegetables and stir for 2-3 minutes until they start to soften.
- Add water, salt, and black pepper and let it boil.
- Reduce the heat and let it simmer for 8-10 minutes or until the vegetables are tender.
