Lean Chicken Soup Recipe

Ingredients
- 1 pound boneless, skinless chicken breasts
- 1 tablespoon olive oil
- 1 medium onion, diced
- 2 cloves garlic, minced
- 3 carrots, peeled and sliced
- 2 celery ribs, sliced
- 8 cups low-sodium chicken broth
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1 bay leaf
- Salt and pepper, to taste
Instructions
- In a large pot or Dutch oven, heat the olive oil over medium heat. Add the onion and garlic and cook until they are soft and translucent, about 5 minutes.
- Add the carrots and celery and cook for an additional 5 minutes, or until the vegetables start to soften.
- Add the chicken broth, thyme, rosemary, bay leaf, and a pinch of salt and pepper. Bring the soup to a boil.
- Add the chicken breasts to the pot and reduce heat to a simmer.
- Cover the pot and cook for 20-25 minutes, or until the chicken is cooked through and no longer pink in the center.
