Vegetable Lo Mein for Two

Ingredients
- 8 oz. lo mein noodles
- 2 Tbsp. vegetable oil
- 2 cloves garlic, minced
- 1/2 cup shredded carrots
- 1/2 cup sliced mushrooms
- 1/4 cup soy sauce
- 2 Tbsp. brown sugar
- 1 tsp. sesame oil
- 1/4 tsp. red pepper flakes
- 1/2 cup chopped green onion
Instructions
- Cook the lo mein noodles according to package directions. Drain and set aside.
- In a large skillet or wok, heat the vegetable oil over medium-high heat. Add the garlic and cook for 1-2 minutes, until fragrant.
- Add the shredded carrots and sliced mushrooms to the skillet and cook for 3-4 minutes, until the vegetables are tender.
- In a small bowl, whisk together the soy sauce, brown sugar, sesame oil, and red pepper flakes. Pour the sauce over the vegetables and stir to combine.
- Add the cooked lo mein noodles to the skillet and stir to combine with the vegetables and sauce.
- Cook for an additional 2-3 minutes, until the noodles are heated through.
